Senior Sous Chef Wokingham £40k Summary Term: Permanent Hours: Full-time 45 hpw Salary: Up to £40,000 depending on experience The Client Our client are a stunning country house hotel in Wokingham Purpose of the role The Senior Sous Chef will assist the Head Chef in both culinary and administrative tasks. We are looking for professional who is dedicated to food quality and sets high standards for their output. The candidate will be primarily working the late shift from (Apply online only) with the aim of raising the standards of the evening service for both the restaurant and bar menus, they will need to be able to organise and send smaller main house banquets from the main kitchen during service periods whilst restaurant and bar services are running so organisation is key. Responsibilities The Ideal Sous Chef Candidate Demonstrate how to use Re-gen on the Rational ovens in the King Suite and to have experience in large plated functions using the Rational ovens. Have a calm persona and ability to run the pass for busy A la carte services. Solid understanding of kitchen management and conflict management. Solid understanding of food costs and GP. The ability to train and inspire the restaurant team and serve consistently great food. To be able to confidently run a menu tasting according to our standards and have conversations with clients and wedding couples in Head Chefs absence. Advanced food hygiene level 3 and allergens. Systems, Microsoft packages, fourth, procure wizard similar. Driving licence would be an advantage as we are a fairly remote site.
