  • As Hotel Manager, you will be a key leader within the hotel, supporting the

General Manager in overseeing all operational areas and delivering Nobu’s vision of service excellence, commercial success and strong team culture.

You will act as a role model for our values, lead with integrity, energy and entrepreneurial thinking, and continuously enhance the guest journey, food and beverage experiences, and colleague engagement.

  • Contribute to the strategic direction of the property as part of the Executive Committee.
  • Lead and advocate for the guest experience across all touchpoints, including restaurants, bars, events and in‑room dining.
  • Drive operational performance across departments, balancing revenue growth, cost control and service excellence.
  • Provide visible leadership and support to the Food & Beverage division, ensuring standards, service flow and commercial targets are achieved.
  • Build revenue forecasts, supporting the achievement of budgets, upsell targets and financial objectives across Rooms and F&B.
  • Participate in marketing initiatives and commercial planning to support business growth, including restaurant and events performance.
  • Support vendor sourcing, quality control, purchasing and contract management across operational areas.
  • Deputise for the

General Manager in their absence, assuming full leadership responsibility.

  • Identify opportunities to improve efficiency, productivity and guest satisfaction across the hotel.
  • Act as a visible and approachable leader for colleagues across all departments.
  • Build strong relationships with Sales, Revenue, Reservations, Culinary and operational teams.
  • Empower teams to deliver exceptional service to internal and external guests.
  • Ensure all statutory, health and safety and company standards are implemented and maintained.
  • Support the development and maintenance of departmental procedures to maximise performance.
  • Oversee the end‑to‑end guest journey, ensuring every guest experiences Omotenashi.
  • Provide coaching, guidance and leadership to managers and teams to enhance performance.
  • Act as an ambassador for Nobu, embodying our values of Family, Crafted, Smile and Kokoro.

Qualifications

  • Senior leadership experience within a luxury hotel environment, with strong operational and commercial awareness across both Rooms and Food & Beverage.
  • Confident decision maker with the ability to inspire teams, drive performance and manage multiple priorities in a dynamic environment.
  • Strong understanding of restaurant and bar operations alongside hotel functions.
  • Collaborative, strategic and guest‑first mindset.
