Responsibilities

  • Prepare, cut, cook and present sushi dishes to Nobu’s exacting standards
  • Ensure station set up and operating efficiently throughout service
  • Follow recipes and maintain consistency across all dishes
  • Create Omakase, tasting and special menus in collaboration with the Head Sushi Chef
  • Uphold strict hygiene, safety and sanitation practices at all times
  • Store raw materials safely and maintain cleanliness in all areas
  • Monitor Health & Safety compliance and report any issues promptly
  • Maintain equipment in safe working condition and report breakdowns
  • Handle allergy requests with care and communicate clearly with service teams
  • Support and train new team members, fostering collaboration and excellence
  • Attend team briefings and contribute ideas for continuous improvement
  • Demonstrate a proactive, positive approach to work and guest care
  • Act as an ambassador for Nobu values of Family, Crafted, Smile and Kokoro

Qualifications

You bring proven experience as a Sushi Chef within a luxury hospitality or fine dining environment. You have exceptional knife skills, a deep understanding of Japanese culinary traditions and a passion for innovation. With a commitment to precision and artistry, you’ll help deliver Nobu’s signature dining experience.
