As a Head Pastry Chef at Nobu Hotel London Portman Square, you'll lead our pastry kitchen with artistry, innovation and genuine passion. You will:

  • Lead, inspire and develop the pastry team, fostering a collaborative and supportive kitchen environment.
  • Create innovative pastry concepts, menus and seasonal offerings that reflect Nobu's style and standards.
  • Develop and implement a standout Afternoon Tea experience for the hotel.
  • Ensure every dish is crafted with exceptional quality, precision and presentation.
  • Manage budgets, food costs, labour planning and overall pastry profitability.
  • Maintain all food safety, hygiene and health & safety requirements across the pastry section.
  • Oversee stock control, ordering and supplier relationships, ensuring consistency and quality.
  • Train and mentor chefs at all levels, encouraging growth and advancement.
  • Collaborate with the Executive Chef on new ideas, tastings and creative development.
  • Support marketing and Food & Drink initiatives with imaginative pastry activations.
  • Communicate effectively with colleagues across all departments to ensure seamless service.
  • Respond to internal and external audits and follow through on action plans.
  • Ensure kitchens and workspaces remain clean, organised and operational at all times.
  • Attend meetings, share insights, and contribute to the wider kitchen strategy.

  • Demonstrate a proactive, positive and hands-on approach, especially under pressure.
  • Assist the wider kitchen team and support guest needs as required.
