You will:
- Lead, inspire and develop the pastry team, fostering a collaborative and supportive kitchen environment.
- Create innovative pastry concepts, menus and seasonal offerings that reflect Nobu’s style and standards.
- Develop and implement a standout Afternoon Tea experience for the hotel.
- Ensure every dish is crafted with exceptional quality, precision and presentation.
- Manage budgets, food costs, labour planning and overall pastry profitability.
- Maintain all food safety, hygiene and health & safety requirements across the pastry section.
- Oversee stock control, ordering and supplier relationships, ensuring consistency and quality.
- Train and mentor chefs at all levels, encouraging growth and advancement.
- Collaborate with the Executive Chef on new ideas, tastings and creative development.
- Support marketing and Food & Drink initiatives with imaginative pastry activations.
- Communicate effectively with colleagues across all departments to ensure seamless service.
- Respond to internal and external audits and follow through on action plans.
- Ensure kitchens and workspaces remain clean, organised and operational at all times.
- Attend meetings, share insights, and contribute to the wider kitchen strategy.

- Demonstrate a proactive, positive and hands-on approach, especially under pressure.
- Assist the wider kitchen team and support guest needs as required.
