As a Head Pastry Chef at Nobu Hotel London Portman Square, you’ll lead our pastry kitchen with artistry, innovation and genuine passion. What We’re Looking For
You are a skilled pastry professional with experience in a senior kitchen role, ideally within luxury hotels or high-end restaurants. You thrive in a creative, fast-paced environment and take pride in leading a team through busy services with confidence and clarity. With strong organisational skills, a passion for flavour and design, and a genuine love for hospitality, you’ll elevate the pastry offering and contribute to the hotel’s reputation for excellence.
Responsibilities
- Lead, inspire and develop the pastry team, fostering a collaborative and supportive kitchen environment
- Create innovative pastry concepts, menus and seasonal offerings that reflect Nobu’s style and standards
- Develop and implement a standout Afternoon Tea experience for the hotel
- Ensure every dish is crafted with exceptional quality, precision and presentation
- Manage budgets, food costs, labour planning and overall pastry profitability
- Maintain all food safety, hygiene and health & safety requirements across the pastry section
- Oversee stock control, ordering and supplier relationships, ensuring consistency and quality
- Train and mentor chefs at all levels, encouraging growth and advancement
- Collaborate with the Executive Chef on new ideas, tastings and creative development
- Support marketing and Food & Drink initiatives with imaginative pastry activations
- Communicate effectively with colleagues across all departments to ensure seamless service
- Respond to internal and external audits and follow through on action plans
- Ensure kitchens and workspaces remain clean, organised and operational at all times
- Attend meetings, share insights, and contribute to the wider kitchen strategy
- Uphold and embody Nobu values of Family, Crafted, Smile and Kokoro
- Demonstrate a proactive, positive and hands-on approach, especially under pressure
- Assist the wider kitchen team and support guest needs as required
