As Executive Sous Chef, you will be the principal operational partner to the Executive Chef, playing a critical role in leading and developing the kitchen operation across all outlets. You will support and guide Head Chefs, ensure consistency and excellence at every level, and help deliver Nobu's culinary vision through strong leadership, commercial awareness and hands-on involvement. Acting as deputy to the Executive Chef, you will be a key link between senior culinary leadership and the wider kitchen teams.
Responsibilities
- Support the Executive Chef in leading all kitchen operations across Nobu Restaurant, Meetings and Events, Lounge, In Room Dining and the staff restaurant.
- Act as deputy to the Executive Chef, assuming full responsibility in their absence.
- Provide leadership, direction and mentoring to Head Chefs and senior kitchen leaders.
- Ensure all kitchens operate smoothly, efficiently and in line with Nobu brand standards.
- Maintain exceptional knowledge of Nobu menus, recipes and culinary philosophy.
- Ensure consistency of quality, flavour and presentation across all outlets and services.
- Support menu development, tastings and seasonal updates while protecting brand integrity.
- Oversee recipe accuracy and documentation within ProcureWizard.
- Build and maintain strong supplier relationships, supporting ordering and stock control.
- Support budget delivery, food cost control, labour planning and forecasting.
- Identify opportunities to reduce waste and improve operational efficiency.
- Drive training, development and succession planning across the kitchen brigade.
- Support recruitment, trials, probation reviews and performance management.
- Lead by example in professionalism, conduct and culinary excellence.
- Ensure full compliance with food safety, hygiene and health and safety legislation.
- Oversee audits, action plans and ongoing compliance across all kitchen areas.
- Support the development and maintenance of kitchen SOPs and standards.
- Respond promptly to maintenance issues and ensure equipment is safe and operational.
- Attend senior leadership and hotel wide meetings as part of the culinary leadership team.
- Contribute to long term culinary strategy, standards development and continuous improvement.
