Responsibilities

  • Fully responsible for the strategic and operational management of The Lounge as an independent revenue centre.
  • Lead afternoon and evening service periods with a strong, visible presence on the floor, ensuring all luxury service standards are upheld.
  • Analyse restaurant sales levels and profitability, creating and implementing strategic plans to achieve sales and revenue goals.
  • Own the full P&L responsibility for the department: prepare accurate forecasts, manage budgets, and optimise labour and cost of sales.
  • Develop and execute innovative wine, sake, and cocktail programs, collaborating with suppliers to curate unique beverage offerings.
  • Design and execute creative lounge promotions, collaborations, and seasonal activations to drive traffic, revenue, and brand engagement.
  • Inspire, mentor, and lead the team to focus on revenue growth and upselling opportunities that enhance guest dining and bar experiences.
  • Partner with F&B Marketing to promote The Lounge, build the customer database, and position the space as a key destination.
  • Be forward-thinking and innovative in operations, best practices, and service delivery.
