As a Pastry Sous Chef at Nobu Hotel London Portman Square, you’ll play a key leadership role within our pastry and culinary team — guiding chefs, elevating creativity and helping bring the Nobu pastry vision to life. With a passion for flavour, design and service, you’ll support the Executive Chef in delivering memorable guest experiences across the hotel.
You will:
- Lead pastry preparation and ensure exceptional quality, presentation and consistency across all kitchens.
- Support menu development, creativity and innovation in line with Nobu’s culinary vision.
- Communicate menu details, allergens and key information clearly to relevant teams.
- Maintain high standards of food safety, hygiene and kitchen organisation.
- Assist with managing budgets, stock control, equipment and labour planning.
- Train, mentor and support chefs at all levels, fostering development and teamwork.
- Contribute to marketing activations and the creation of unique pastry experiences.
- Respond to audits, support operational needs and collaborate effectively across departments.
