As part of the Webb Hotel Group, a family-owned and run business, The Gables Hotel is a well-established country house hotel located on the edge of the Cotswolds, just north of Gloucester. The hotel offers comfortable accommodation, welcoming hospitality, and a relaxed atmosphere for both leisure and business guests.

We are looking for an experienced and passionate Head Chef to lead our kitchen team and drive a high-quality food offering across the hotel. At the heart of the hotel is Marco’s Italian New York — our contemporary restaurant serving Italian-American dishes with a focus on great flavour, consistency, and warm hospitality. Alongside the restaurant, the kitchen plays a key role in delivering functions, weddings, private dining, and corporate events, so you’ll be confident balancing service with event delivery.

Responsibilities
  • Lead, manage, and motivate the kitchen team across restaurant service and events
  • Oversee the delivery of food at Marco’s Italian New York, ensuring high standards and consistency
  • Plan and execute menus for the restaurant and functions/events
  • Deliver successful functions, private dining, weddings, and corporate events
  • Manage ordering, stock control, waste, and supplier relationships
  • Monitor kitchen performance, cost control, and GP margins
  • Ensure full compliance with food safety, hygiene, and health & safety standards
  • Train, develop, and support kitchen team, maintaining a positive kitchen culture
About You
  • Proven experience as a Head Chef (or an experienced Sous Chef ready to step up)
  • Strong leadership, communication, and organisational skills
  • Confident managing high-volume service alongside functions/events
  • Strong understanding of kitchen admin, rotas, ordering, and cost control
  • Passionate about fresh food, standards, and guest experience
  • Flexible approach to working patterns
Role Details
  • Full-time 5 days out of 7, including weekends and key bank holidays
  • Salary: ÂŁ42,000 per annum
