In spirit, Mollie’s was born in America – an offspring of the classic roadside motel and drive-in diner, a welcome stopover on a route to somewhere. We’ve borrowed the inviting red neon signs and the easy-going vibe, the burgers, the shakes, the bottomless coffee, a dash of nostalgia, but there’s nothing old-school about Mollie’s. Following the success of its first sites in Oxfordshire and Bristol, Mollie's Manchester opened it's doors in late 2025. A further ten locations are already earmarked as part of the immediate expansion plan to forge a new ‘budget-luxe’ sector in the travel and leisure industry.

THE ROLE

At Mollie’s, Chefs must be food obsessed, dedicated to exceeding guest expectations, and focused on training and developing within a high performing kitchen team to achieve agreed KPIs, controls, and high standards. As a Senior Sous Chef, you will be a dynamic team member expected to lead from the front to train and develop the team around you and to consistently deliver the high standards of food our guests expect. You need to be driven, passionate about food, and have an acute attention to detail.

You will ensure that operational procedures are always maintained to ensure consistency and compliance.

You will work closely with the Head Chef to review new processes, initiatives and offerings to ensure efficiency and constantly improve the business.

Key Responsibilities

  • Supporting the Head Chef in the day-to-day running of the kitchen and deputising in their absence
  • Consistently delivering food to high company standards
  • Ensuring strict compliance with food safety and health & safety regulations
  • Working with the Head Chef to train and develop the kitchen team
  • Supporting the Head Chef with ordering and stock takes

Experience & Requirements

  • A minimum of three years’ experience as a Sous Chef is essential
  • Fluency in English; knowledge of other languages is a bonus
  • A qualification in catering/ hospitality is desirable but not essential
  • Certification to Level 3 Food Safety is preferable
