Sommelier Candidate Requirements:
- Take ownership of and develop the restaurant’s wine list.
- Manage supplier relationships and negotiate effectively.
- Oversee wine ordering, cellar management, and stock control.
- Approve invoices and maintain accurate records.
- Maintain and share guest wine notes with the reservations and reception teams.
- Act as a key figure for the restaurant’s wine-related activities.
- Collaborate with the Head of Beverage to maintain and update the wine list.
- Deliver exceptional wine service during lunch, dinner, and private events.
- Inspire, train, and empower the FOH team to confidently pair and sell wine.
- Mentor and support the development of Junior Sommeliers.
- Assist with wine inventory, stock counts, and reporting.
- Ensure guests receive best-in-class wine service that enhances their dining experience.
- Contribute to improving the overall beverage offering, including spirits and soft drinks.
- Work closely with the R&D team to develop knowledge of fermentation and ingredients.
- Passion for hospitality and exceptional guest experience.
- Strong organisational skills and attention to detail.
- Ability to lead, train, and motivate a team.

About MJMK Restaurants
MJMK Restaurants own and operate a collection of award-winning restaurants. Founded in 2018 by lifelong friends Jake Kasumov and Marco Mendes, our journey began with Casa do Frango. In 2020, we partnered with chef patron Santiago Lastra to open KOL, a fine dining restaurant in Marylebone celebrating Mexican cuisine with British ingredients. KOL has since earned a Michelin Star, named No. 17 on the World’s 50 Best Restaurants list.

At the 2025 National Restaurant Awards, AngloThai was named \’The Square Opening of the Year\’ and ranked 7th in the Top 100 list, followed by KOL at number 50. In September, we will see the opening of Luso, a contemporary Portuguese restaurant in Fitzrovia.
