Bartender Candidate Requirements:

  • Experience in a bartender role within a quality-focused, high-volume bar or restaurant
  • Good knowledge of classic and contemporary cocktails, spirits, wine, and beer
  • Able to consistently follow recipes and maintain drink presentation and standards
  • Confident in managing prep for bar service, including garnishes, syrups, and stock rotation
  • Organised and capable of maintaining a clean, efficient, and well-stocked bar throughout service
  • Warm and engaging personality
  • Excellent communication skills and able to work seamlessly with the kitchen, floor, and door teams
  • Passionate about providing memorable guest experiences through product knowledge and personalised recommendations
  • Willing to contribute to daily briefings and help train other team members on drink offerings
  • Understands and complies with all food hygiene and health & safety regulations
  • Reliable, punctual, and a proactive team player who thrives in busy service environments
  • Strong attention to detail and able to spot and address issues quickly, especially under pressure

About FONDA:

Fonda is an exciting, contemporary Mexican restaurant, years in the making from chef Santiago Lastra and MJMK Restaurants. Opened in 2024 in Mayfair’s Heddon Street, Fonda has showcased regional Mexican cooking through Santiago’s unique lens, presented in an elegant, vibrant style, complemented by contemporary design.

In Mexico, a Fonda is a family-owned eatery, serving traditional dishes in an informal setting, each inspired by personal recipes from the generations that came before. Santiago Lastra’s Fonda builds on this concept to showcase recipes from across the country. Though seemingly simple, Fonda’s dishes draw on the quality and provenance of ingredients, combined with innovative techniques to elicit the flavours of Mexico in a modern way. We are looking for a passionate and professional Waiter to join the team at Fonda. You will play a key role in delivering a seamless guest experience, working closely with the team to ensure service runs smoothly and consistently to a high standard. In this fast-paced environment, you will bring precision, care, and a positive attitude to every shift.

MJMK Restaurants own and operate a collection of award-winning restaurants. Founded in 2018 by lifelong friends Jake Kasumov and Marco Mendes, our journey began with Casa do Frango.
