Luso, our Portuguese restaurant on Charlotte Street, is looking for a General Manager to lead it. This role exists to take full ownership of the restaurant and to uphold the standard its place in the Michelin Guide reflects.
The General Manager leads Luso from the floor and takes full accountability for the restaurant: the guest experience, the team, and the commercial performance of the site. You will set the standard the team follows through every service, working closely with the head chef and the team.
Key Responsibilities:
- Lead the restaurant from the floor every service, setting the standard for guest experience and consistency
- Take full accountability for the site, including the guest experience, the team, standards and the P&L
- Recruit, train and develop the team across all areas of the restaurant
- Manage and develop the Heads of Department, delegating and holding teams accountable so the restaurant runs seamlessly in your absence
- Drive revenue through covers, spend per head, events and local engagement
- Manage labour, gross profit and all controllable costs with precision
- Maintain impeccable standards across the property, facilities and cleanliness
- Work closely with the head chef and the wine and drinks team to develop the food and drink offer
- Proactively identify improvements and implement solutions across guest experience, people and operations
What We're Looking For:
- Minimum 2 to 4 years' experience as a General Manager
- A proven track record of managing quality restaurants (£70K+ net per week average)
- A genuine obsession with the guest experience, leading hands-on from the front
- Empathic, respected people leadership that builds a positive team culture
- Diligent custodianship of the site, maintaining impeccable standards across property, facilities and cleanliness
- Expertise in managing Heads of Department, delegating, developing and holding teams accountable
- Strength in recruitment, training and team progression across all areas of the restaurant
- Exceptional attention to detail, spotting issues before they arise
- P&L expertise, driving revenue while managing labour, gross profit and all controllable costs with precision
