The Sous Pizzaiolo sits at the heart of Rudy's Pizzeria. Working closely with the Head Pizzaiolo, you'll manage the day-to-day running of the kitchen, maintain quality across every single service, and make sure the team around you are developing and performing at their best. This is a leadership role as much as it is a craft role.

Your Day-to-Day:

  • Supporting the Head Pizzaiolo in running the kitchen
  • Managing station prep, workflow, and service execution across every shift
  • Leading and motivating the kitchen team
  • Maintaining Rudy's quality standards and recipe adherence consistently
  • Overseeing food hygiene, allergen compliance, and health & safety
  • Contributing to training, coaching, and the ongoing development of the team
  • Taking full ownership of the kitchen in the Head Pizzaiolo's absence
  • Supporting stock management, ordering, and waste reduction initiatives

What Rudy's needs:

  • Proven kitchen leadership experience in a high-volume environment
  • Expert-level Neapolitan pizza knowledge and technique
  • Strong organisational skills and the ability to manage a full service under pressure
  • A natural coach and communicator who genuinely gets the best from a team
  • Meticulous standards around food safety and hygiene
  • Ambition and drive to progress to Head Pizzaiolo level
