You should be a practical self-starter with good common sense and heaps of initiative and be an excellent customer facing manager who can manage all aspects of running an efficient service with a friendly family like environment.

Role Details:

  • Recruitment and training of front of house staff
  • Production of a weekly front of house staff rota
  • Working on the floor as part of the front of house team and ensuring an excellent service for all customers at all times.
  • Responsibility for adequately staffing the front of house at all times within the salary budget. Be prepared to cover, or arrange cover, in cases of emergency
  • Keep a record of, and manage, front of house holidays
  • Manage the wine, cider, soft drinks and spirit lists. Arrange wine tastings and change the list as considered necessary or desirable
  • Be responsible for ordering of all front-of house products
  • Ensure that the daily and weekly cash analysis records are completed
  • Check the monthly statements for payment by the proprietor
  • Complete the monthly record of the restaurant's expenditure
  • Organise regular stock takes and calculate margins
  • Arrange for repairs to defective equipment, plumbing, electrics and drainage
  • Ensure regular maintenance/servicing of equipment completed
  • Research replacement costs where necessary and report to the proprietor
  • Ensure high levels of cleanliness and standards throughout the business
  • Ensure due diligence and compliance with all Health and Safety and food hygiene requirements
  • In conjunction with the head chef, deal with Environmental health department inspections and effect necessary follow-ups
  • Experience of P&L essential
  • Reply to and follow up enquiry emails
  • Assist the proprietor, and eventually take over, the organisation of private functions and special events
  • Assist with PR and marketing in coordination with the PR

  • Passion for food and service essential with a good wine knowledge desirable

  • French / English speaker essential
