The Copthorne Hotel Newcastle Upon Tyne is seeking an experienced Junior Sous Chef to assist the Head Chef in running the kitchen operation.
Responsibilities:
- Work closely with the Head Chef, taking responsibility for the kitchen brigade when in charge of a kitchen shift.
- Supervise receipt of deliveries, undertake delivery controls, authorise acceptance by signature, and oversee correct storage of goods received.
- Ensure that staff operate and clean kitchen equipment in strict compliance with procedures, hygiene, and safety requirements.
- Check the standard of all food before it leaves the kitchen, ensuring agreed standards of presentation and service are met.
- Adhere to all regulations relating to Health & Safety, hotel rules, food safety, and emergency procedures.
- Agree on standards of food preparation and presentation with the Head Chef and assist in the planning of creative menus within cost targets and prescribed quality standards.
- Assist the Head Chef in training new and existing staff, maintaining training records and utilising the set review and appraisal system.
Qualifications:
- Previous experience in the hotel industry.
- Outstanding experience in the kitchen with food preparation and people management.
- Proven culinary skills.
Skills:
- Enthusiastic and motivated, with a good eye for detail and accuracy.
- Ability to develop relationships with other hotel departments and communicate effectively to ensure control measures are understood and adhered to.
