The Copthorne Hotel Newcastle Upon Tyne is seeking an experienced Junior Sous Chef to assist the Head Chef in running the kitchen operation. Whether you have experience or are looking for the next step in your career, the Copthorne Hotel Newcastle wants to hear from you.

Responsibilities

  • Working closely with the Head Chef, taking responsibility for kitchen brigade when in charge of the kitchen shift.
  • Supervising receipt of deliveries, undertaking delivery controls and authorising acceptance by signature and overseeing correct storage of goods received.
  • Ensuring that when staff operate and clean the kitchen equipment they adhere strictly to correct procedures and comply with hygiene and safety requirements.
  • To check the standard of all food before it leaves the kitchen, to ensure that agreed standards of presentation and service are adhered to.
  • To adhere to all regulations relating to Health & Safety, Hotel rules and regulations, Food Safety and Emergency procedures.
  • To agree standards of food preparation and presentation with Head Chef and assist in the planning of creative menus within cost targets and to prescribed quality standards.
  • To assist the Head Chef in the training of new and existing staff, maintaining training records and utilising the set review and appraisal system.

Experience & Qualifications

  • Previous experience in the Hotel industry.
  • Outstanding experience in the kitchen with food preparation and people management.
  • Proven culinary skills.

Other Skills

  • Enthusiastic and motivated, with a good eye for detail and accuracy.
  • The role also relies on developing a relationship with other departments in the hotel, hence it is crucial you are able to communicate effectively to ensure control measures are understood and adhered to.
