The Spanish Butcher in Glasgow's Merchant City opened in 2015, owned and operated by restaurant group RUSK & RUSK. Delivering an authentic Spanish dining experience in the heart of Glasgow, with a focus on Galician beef, Iberico ham, and exquisite seafood, our menus showcase the freshest Spanish flavours and ingredients combined with a Midtown Manhattan design.

THE ROLE: GENERAL MANAGER

As the General Manager, you will play a crucial role in the continued growth and success of this flagship restaurant in the RUSK & RUSK collection. You should have a proven track record in high-calibre restaurants, specialising in modern cuisine and great service.

THE PERSON

  • Minimum of 3 years consistent experience in a senior managerial role within fine dining or high-calibre hospitality, hotel, restaurant, and bar environments.
  • A proven track record of achieving commercial performance and growth.
  • A proven track record of delivering high standards of service.
  • A proven track record of motivating large teams including kitchen staff.
  • Training and development delivery.
  • Bar management experience.
  • High-volume dinner service within a high-calibre restaurant.
  • Back of House experience.
  • Outstanding knowledge of hospitality, food, and drink.
  • An understanding and appreciation of high-quality produce.
  • Evidence of managing large teams.
  • A stickler for detail.
