McCabe & Barton is partnering with a leading insurance business to hire an Artificial Intelligence Engineer for a hands‑on role focused on building and deploying practical AI solutions across the organisation.
This is an opportunity to work on real‑world Generative AI use cases, including copilots, chatbots, document intelligence tools and LLM‑driven workflows, within a regulated insurance environment.
The role will suit a pragmatic engineer who can move beyond proof of concept and deliver secure, scalable and production‑ready AI solutions.
Key experience required:
- Strong Python and backend engineering experience
- Hands‑on experience with OpenAI and/or Anthropic Claude APIs
- Practical experience with prompt engineering and LLM application development
- Experience with RAG, embeddings and vector databases
- Google Cloud Platform experience, ideally including Vertex AI
- Familiarity with CI/CD, Docker and modern cloud architecture
- Ability to work with both structured and unstructured data
- Strong understanding of security, scalability and production-readiness
Experience in insurance, financial services or another regulated environment would be advantageous, but the key requirement is proven hands‑on AI engineering capability.
