A fantastic opportunity has arisen for an experienced and passionate Executive Pastry Chef to join the Cedric Grolet team at The Berkeley. With an independent spirit and an eye for style, The Berkeley is the epitome of modern British luxury. Rooms are furnished by leading designers. The Berkeley is perfectly positioned between Hyde Park, fashionable Knightsbridge and the residential neighbourhood of Belgravia. Its signature experiences include the famed Blue Bar, The Berkeley Bar & Terrace, and The Berkeley Café.
Main Duties and Responsibilities
- Responsible for the management of the Cedric Grolet Patisserie production to clients of the Hotel.
- Provide direction and supervision to all employees deployed in the Pastry.
- Deliver creative direction and innovation in partnership with Cedric Grolet.
- Lead in the preparation of regular food items, daily specialties and any other special functions.
- Responsible for ordering of food purchases and stock control, ensuring that stock levels are in line with Company requirements.
- Supervise the Pastry team on a daily basis.
- Menu creation on a seasonal basis.
- Instruct, brief and supervise Sous Chefs and the brigade in their daily tasks, assist them in their preparation of food.
- Maintain high levels of communication between Sous Chefs and Chefs de Parties at all times, ensuring special messages/requests are dealt with promptly.
- Check all food deliveries for quality, quantity and maintain close liaison with Purchasing Department.
- Prepare food requisitions in accordance with daily routine, taking into account advance planning, special bookings and staffing levels.
- Participate in supervising and preparation of all baked goods, pastries and desserts in accordance with established recipes.
- Ensure that maximum effort is given to achieve an efficient service whilst maintaining the highest possible standards.
- Ensure that all recipes of any new dishes are immediately recorded and support any tests which may be necessary to achieve accurate costing and final presentation definition.
- Ensure the correct rostering of staff within your section and department.
- Supervise, monitor and motivate staff in your section.
- Ensure that staff in your section is properly dressed to the standard required by the Hotel.
- Maintain discipline in a fair and consistent manner, including timekeeping.
- Identify any special training needs within your section.
- Carry out on-the-job training for staff within your section.
- Encourage and motivate staff within your section.
- Maintain high standards of personal hygiene and cleanliness of lockers, showers, toilets and changing rooms.
- Be alert for opportunities to improve the profitability of the section.
- Control the wastage of food.
- Be responsible for economy of utilities, such as use of gas, electricity and water.
- Maintain effective communication with staff in the section and ensure they are well informed.
- Report any problems and complaints to the Executive Chef and keep him informed.
- Attend lectures, meetings, training sessions as required.
- Carry out any reasonable request as required by the Executive Chef.
- Always be suitably dressed and wear correct and clean uniform at all times to the required standard of the hotel, including adequate non-slip footwear.
