Matthews Cotswold Flour is Britain’s leading artisan flour mill, producing award-winning speciality flours for home bakers, trade bakeries, wholesalers, and other commercial partners. Founded over 110 years ago, the business is now run by 8th generation family member and Managing Director, Bertie Matthews, maintaining strong heritage alongside modern practices. The company works closely with local farmers to source British wheat grown using conventional, regenerative, and organic methods. As a flour miller, you will become part of a highly skilled team responsible for producing premium flour products to the highest standards of quality, food safety and customer satisfaction. This position offers specialist training and development, providing you with the skills and knowledge required to excel in milling. The Trainee Miller will work closely with experienced millers to understand grain varieties, milling techniques, and product specifications, while contributing to smooth, efficient mill operations.

Key responsibilities include:

  • Operate and maintain milling machinery to process grain into flour.
  • Monitor milling performance and make adjustments to achieve quality and production targets.
  • Carry out routine equipment inspections and report maintenance requirements.
  • Maintain the high standards of food safety, hygiene and workplace safety.
  • Ensure work areas remain clean, organised and compliant with site standards.
  • Manage raw material stocks, including grain intake and storage.
  • Work closely with Quality and Technical teams to ensure product compliance and consistency.
  • Complete and maintain accurate production, maintenance and quality records.
  • Participate in continuous improvement initiatives across the milling and production departments.
