The employer Wilderness Reserve is an 8000-acre estate of woodland, lakes and rolling pasture, sprinkled with an eclectic collection of historic and traditional Suffolk properties. Lovingly restored by artisans, each home has unique character. From the grand Grade II listed manor house and restored 15th century barn, to charming, thatched cottages and romantic retreats, Wilderness Reserve is a long-term conservation and restoration project - protecting English nature and breathing new life into historic properties.

The job As Food and Beverage Director, you will be responsible for overseeing all aspects of the F&B department, ensuring that costs are controlled, operations run efficiently, and all food and beverage services meet the highest standards. You will manage supplier relationships, implement new systems and procedures to improve operational efficiency, and support large-scale events with tailored F&B provisions. Leading the whole team including team of chefs based at our Estate Kitchen, you will ensure seamless service across the estate’s venues, maintaining Wilderness Reserve’s reputation for excellence.

What you'll need:

  • Proven experience in a senior F&B role, ideally within a luxury hospitality environment.
  • Strong financial acumen with experience in cost control, budgeting, and supplier management.
  • Excellent leadership skills, with a track record of developing and managing high-performing teams.
  • Experience implementing new software and operational systems within F&B departments.
  • Ability to manage multiple projects, from large-scale events to estate-wide initiatives.
  • Knowledge of food safety, risk assessments, and due diligence procedures.
  • A hands-on, problem-solving approach with a passion for delivering outstanding guest experiences.
  • Full UK driving licence and transport, due to location.

Where you'll be based Wilderness Reserve is located across 8000 acres, spanning Heveningham, Sibton, and Yoxford in stunning surroundings.

What you'll receive:

  • £45,000 - £48,000 per annum
  • Employed role (permanent contract)
  • Working 5 days out of 7, including evenings and weekends, as the business requires
  • 28 days annual leave (bank holidays to be taken in lieu if worked)
