As a Sous Chef at JW Steakhouse, you will learn all the tricks of the trade and be the master of the kitchen. Your attention to each preparation keeps guests returning to dine. Working with a dedicated team of experts, you will learn something different every day as you work with new seasonal menus and unique presentations.

In mid-March, Grosvenor House welcomes the newly renovated JW Steakhouse, boasting stunning interiors with classic steakhouse favourites and a new Bourbon Bar.
What you’ll be doing:
- Exceed guest expectations and provide Marriott high service, ensuring a pleasant and memorable dining experience.
- Support the Executive Sous Chef in the daily running and supervision of the kitchen operation.
- Provide effective and professional service in all food outlets for external and internal customers.
CANDIDATE PROFILE:
- Solid experience in kitchen operation required.
- Able to demonstrate competent technique and cooking skills relevant to experience.
- Ability to work under pressure in a very busy kitchen.
- Good supervisory and man management skills.
- Passion, enthusiasm, and reliability.
- Capable of maintaining and supervising the hotel's food quality standards.
- Sound understanding of food safety standards and HACCP.
- Knowledge of high-volume catering.
- Strong communication skills (verbal, listening, writing).
- Pro-active and reliable.
- Able to work alone and within a team.
Skills and Knowledge:
- Good level of English essential.
- NVQ Levels one and two desired.
- Minimum level two food safety qualification.
SPECIFIC DUTIES:
- Represent the food production area on a day-to-day basis and ensure that standards of food taste and presentation are met.
- In the absence of the Executive Sous and Senior Sous chef, schedule all kitchen associates to ensure proper coverage.
- Check staff schedules weekly to ensure proper coverage and control wage costs.
- Maintain required items in storage while keeping inventory levels in mind.
- Support procedures for food and beverage portion and wastage controls.
- Ensure standard operating procedures are followed in all areas.
- Follow company policies regarding cleanliness, purchasing procedures, and stock rotation.
- Monitor payroll procedures and time cards.
- Develop and follow recipe cards for all items.
- Train subordinate staff on food production standards and proper equipment use.
- Perform other related tasks as assigned by management.
