Greywalls Hotel and Chez Roux is a five-star country house hotel based in Gullane, East Lothian. Currently, we are looking for an enthusiastic Chef De Partie to join our 27 bedroom country house hotel.

Greywalls Hotel and Chez Roux is excited to offer the opportunity of becoming one of Chez Roux's Chefs and join a dedicated and highly skilled team, which offers a unique and personal style of cuisine and service. Candidates should have experience in a similar role within the team, stock control and only the highest level of skills when it comes to the cooking and presentation of each dish. A "leading by example" attitude should be second nature, and a willingness and passion to go above and beyond to make a guest's experience as good as it possibly can be should always be at the forefront of your mind.

We are looking for a team player with a minimum of 3 years of proven experience in a similar position in a hotel kitchen. You will consistently ensure the kitchen develops, provides and maintains a standard of cuisine of the highest order. Responsibilities include:

  • To be fully conversant with the companies aims and objectives and to play a proactive role in their achievements.
  • To prepare, cook and present high quality dishes within the specialty section.
  • To assist the Junior Sous Chef in creating menu recipes and developing dishes.
  • To actively help in the management of all staff in the kitchen environment including the training of new employees.
  • To monitor portion and waste control.

Qualifications:

  • Proven experience as a Cook or Sous Chef in a fast-paced restaurant environment.
  • Strong knowledge of culinary techniques, food preparation, and presentation.
  • Excellent leadership skills with the ability to motivate and manage a team effectively.
  • Familiarity with kitchen equipment and food safety regulations.
  • Ability to work under pressure while maintaining attention to detail.
  • A passion for hospitality and delivering exceptional dining experiences.
  • Culinary qualifications or certifications are advantageous but not essential.
