Join Marcliffe pastry team and play a key role in one of Scotland’s most prestigious 5‑star hotel kitchens. You’ll work as part of a close‑knit, high‑performing culinary team, producing refined desserts, pastries, breads, and afternoon teas for fine dining, events, and daily service — all delivered to the highest standard. This role reports to the Pastry Head Chef.
As a Pastry Chef de Partie, you will:
- Prepare and present breads, pastries, cakes, desserts, and afternoon tea items to fine‑dining standards
- Support menu development with ideas for seasonal and creative pastry offerings
- Work collaboratively with the Head Chef, Sous Chefs, and wider kitchen team
- Maintain high standards of food quality, hygiene, and presentation across all pastry areas
- Ensure mise en place is well organised and service runs smoothly
- Monitor stock levels, support ordering, and minimise waste through effective rotation
- Keep pastry sections clean, organised, and fully compliant with food safety regulations
- Support and guide junior kitchen team members where required
- Adapt to a variety of service styles, including à la carte dining, afternoon tea, weddings, and large‑scale events
- Contribute to a positive kitchen culture focused on teamwork, professionalism, and high standards
About you:
- Experience working in pastry within a quality‑led kitchen, ideally in a fine‑dining or 5‑star hotel environment
- Passion for pastry, baking, and creating exceptional guest experiences
- Creative with strong attention to detail and presentation
- Well organised, adaptable, and calm under pressure
- A positive, proactive team player with good communication skills
- Sound knowledge of food safety, hygiene, and HACCP
- Relevant culinary qualification preferred
