Marcliffe is seeking a talented and motivated
Pastry Sous Chef to join our 5-star kitchen team.
Reporting directly to the Head Pastry Chef, you’ll play a key role in producing high-quality cakes, pastries, desserts, and fine delicacies for our restaurant, Drawing Room, weddings, conferences, and events.
This is an exciting opportunity for an experienced pastry professional to develop their skills and creativity within an exceptional environment, working with the finest and freshest ingredients alongside a supportive and ambitious team.
About the Role
- Create and produce exceptional desserts, cakes, pastries, and other fine delicacies to five-star standards
- Contribute creative ideas to the development of new desserts, cakes, pastries, and menu concepts
- Decorate and present desserts and pastries with creativity, artistry, and attention to detail
- Ensure all preparation for your designated section is completed to the highest standard and ready for service
- Maintain excellent quality control of ingredients and prepared products, including effective stock rotation and waste management
- Ensure your kitchen areas are clean, organised, and maintained in line with food safety and hygiene standards
- Delegate tasks appropriately to junior chefs and apprentices, supporting their development and training
- Assist with the preparation of rotas according to business and service demands
- Support the Head Pastry Chef in maintaining consistently high standards throughout the pastry kitchen
- Work closely with the wider kitchen team to deliver memorable five-star dining experiences for guests
- Support and actively contribute to weddings, conferences, events, and other company-wide occasions
- Maintain full compliance with health and safety regulations, food safety standards, and company policies
About You
- Previous experience as a
- Pastry Sous Chef or Senior Chef de Partie in a busy five-star or fine-dining environment
- A genuine passion for pastry, food, and the creation of exceptional dishes
- Artistic flair, creativity, and a strong eye for presentation and detail
- Good knowledge of modern food preparation and pastry techniques
- Sound knowledge of food health and safety regulations
- Basic Food Hygiene qualification
- Proactive, hands‑on approach with excellent organisation and communication skills
- Able to work confidently both independently and as part of a team
- Tenacious and able to multitask, prioritise, and perform under pressure in a busy kitchen
- Adaptable, innovative, and flexible to meet changing business demands
- Physically fit and comfortable working long shifts involving standing and walking
- Relevant secondary school qualifications and/or a college certificate in a relevant discipline
