The Role

At JA Mar Hall, we are on an ambitious journey to elevate our guest experience towards Forbes Travel Guide luxury standards. We are seeking a highly driven and hands-on Food and Beverage Services Manager to lead from the front, champion exceptional service, and inspire our team to deliver consistently outstanding experiences across all dining and event operations. This is a dynamic, operational leadership role for someone who thrives in a fast-paced luxury environment and has a deep-rooted passion for restaurant service excellence, while confidently overseeing the broader food and beverage offering across the hotel. Restaurant management experience is critical.

Key Responsibilities

  • Operational Leadership: Lead and oversee daily food and beverage operations across restaurant dining, gallery bar service, breakfast service, afternoon tea, weddings, meetings, and events. Take full ownership of service delivery, ensuring every guest interaction reflects luxury standards and attention to detail. Be highly visible on the restaurant floor, actively managing service, coaching teams, and responding to guest needs in real time.
  • Restaurant and Service Excellence: Drive a restaurant first culture, ensuring refined, intuitive, and personalised service at all times. Implement and uphold Forbes level service standards, adapting and embedding them within daily operations. Develop, implement, and continuously refine SOPs to elevate consistency and quality. Lead pre-service briefings and post-service reviews to drive continuous improvement.
  • Team Leadership and Development: Lead and inspire a diverse food and beverage team including a Bar Manager/ Head Mixologist, Assistant F&B Managers, Breakfast Manager, Supervisors and F&B Assistants. Create a high-performance culture focused on accountability, engagement, and excellence. Coach and develop managers and supervisors to strengthen leadership capability across the department. Ensure effective communication and alignment across all service areas.
  • Events and Multi Outlet Delivery: Provide leadership support across weddings, private events, and corporate functions. Ensure seamless execution of events while maintaining luxury service standards. Demonstrate flexibility to support key business demands across all food and beverage outlets.
  • Commercial and Financial Accountability: Manage labour costs in line with payroll budgets and business needs. Support forecasting, cost control, and revenue driving initiatives. Maintain strong commercial awareness, understanding trends, covers, and performance drivers.
  • Standards and Compliance: Implement JA brand standards and support the transition towards Forbes Travel Guide expectations. Maintain full compliance with health, safety, and licensing regulations. Ensure presentation standards of team, environment, and service consistently reflect a luxury offering.

About You

  • Proven experience in a luxury restaurant or hotel food and beverage leadership role.
  • An ability to perform as an effective restaurant manager is key.
  • Strong operational background with a passion for hands-on service leadership.
  • Demonstrated ability to lead high performing teams in a multi outlet environment.
  • Experience in implementing and maintaining high end service standards.
  • Commercially aware with experience managing budgets and labour costs.
  • Exceptional attention to detail and guest focus.
  • Flexible, resilient, and adaptable in a fast-evolving luxury environment.
  • A natural leader who thrives on developing people and driving standards.
