Role Overview
The Chef de Partie is an important member of the culinary brigade at JA Mar Hall, taking ownership of an allocated section and ensuring food is prepared, cooked and presented to consistently high standards.
Reporting directly to the Restaurant Head Chef, who reports to the Executive Chef, you will play an important role in the continued development of the resort’s culinary offering.
This is a hands-on position for a chef who takes pride in their craft, understands the importance of consistency and enjoys working within a busy, varied resort environment.
JA Mar Hall has a complex Food & Beverage operation, encompassing the Gallery, Dining Room, breakfast, Clubhouse, banqueting, weddings, meetings, events and other guest experiences.
You will therefore need to be flexible and willing to support different areas of the culinary operation when required.
Key responsibilities of the Chef de Partie will include
- Culinary Responsibilities
- Take ownership of your allocated section and ensure it is consistently operated to the required standard.
- Prepare, cook and present food in accordance with recipes, specifications and presentation standards.
- Ensure all food leaving the kitchen reflects the quality expectations of JA Mar Hall.
- Maintain excellent knowledge of ingredients, preparation methods and cooking techniques.
- Complete all required mise en place to the appropriate standard and within agreed timeframes.
- Maintain consistency in flavour, quality, portion control and presentation.
- Support the Restaurant Head Chef and Sous Chefs with menu development and the continued evolution of the resort’s culinary offering.
- Contribute ideas and feedback that can improve food quality, efficiency and guest experience.
- Restaurant & Service Excellence
- Support the Restaurant Head Chef and Sous Chefs in delivering exceptional food across the resort’s restaurant operation.
- Work closely with the wider Kitchen and Food & Beverage teams to ensure smooth service.
- Maintain high standards throughout preparation and service.
- Communicate effectively with senior chefs and Front of House colleagues.
- Respond professionally to guest requirements and special requests.
- Take pride in every plate and understand the importance of consistency in a luxury hospitality environment.
- Support the delivery of VIP experiences, special occasions and bespoke guest requirements where required.
- Meetings, Events & Banqueting
- Be flexible and willing to support the wider culinary operation when required.
- Assist with preparation and delivery for meetings, conferences, weddings, private dining and events.
- Support the Kitchen team with large-scale preparation and event mise en place.
- Work effectively during periods of increased business and high-volume service.
- Be prepared to work across different areas of the resort’s culinary operation according to business requirements.
- Understand that the ability to move between restaurant, banqueting and events operations is an important part of working within a resort environment.
- Operational Excellence
- Maintain excellent organisation and cleanliness within your section.
- Ensure all mise en place is prepared correctly and service-ready.
- Follow all recipes, SOPs and kitchen procedures.
- Support stock rotation, storage and waste management.
- Assist with deliveries and stock checks when required.
- Ensure equipment is used correctly and safely.
- Complete all required cleaning and close-down duties.
- Support the wider Kitchen team during busy periods.
- Take responsibility for raising any operational, quality or equipment concerns with the Restaurant Head Chef or senior culinary team.
- Food Safety & Compliance
- Maintain full compliance with food safety legislation and JA Resorts & Hotels procedures.
- Follow HACCP requirements and all relevant food safety controls.
- Maintain a strong understanding of allergens and dietary requirements.
- Ensure food is stored, prepared and handled safely.
- Maintain high standards of personal hygiene.
- Complete cleaning schedules and relevant records accurately.
- Report any food safety, health and safety or equipment concerns immediately.
- Teamwork & Communication
- Communicate clearly and professionally during service.
- Support junior colleagues and share knowledge where appropriate.
- Be willing to assist colleagues across the Kitchen when required.

About You
- Previous experience as a Chef de Partie or strong experience at Commis Chef level within a quality hotel, restaurant or hospitality environment.
- Strong practical culinary skills and a genuine passion for food.
- Experience working within a busy restaurant or hotel kitchen.
- Experience with banqueting, meetings, weddings or events would be advantageous.
- Strong understanding of food safety, allergens and kitchen hygiene.
- Excellent attention to detail and pride in presentation.
- Ability to work calmly and effectively under pressure.
- Flexible approach to working across different areas of a resort operation.
- Reliable, organised and professional.
