MCG Recruitment is delighted to be working in partnership with a leading UK hospitality operator to recruit an experienced and ambitious Sous Chef for a stunning coastal hotel location on Hayling Island, Hampshire. This is an excellent opportunity for a passionate chef looking to take the next step in his or her career within a large-scale, professional kitchen operation. Working alongside an experienced Head Chef you will play a key role in delivering high-quality buffet-style dining across breakfast and evening service while helping to lead and develop a talented kitchen team.

The Role

As Sous Chef, you will support the smooth day-to-day operation of a busy kitchen serving high volumes of guests in a well-established hospitality environment. The food offering focuses on fresh, quality ingredients delivered through large-scale buffet and market-hall style dining concepts, similar to those found within premium cruise and resort operations.

Key responsibilities

  • Supporting the Head Chef in the management of the kitchen operation.
  • Leading, motivating and developing junior chefs and kitchen staff.
  • Ensuring all food is prepared and presented to brand standards.
  • Maintaining exceptional food safety, hygiene and allergen compliance standards.
  • Managing stock control, ordering and food cost targets.
  • Assisting with menu execution and service planning.
  • Driving consistency, quality and guest satisfaction across all meal periods.
  • Ensuring kitchens remain organised, efficient and fully prepared for service.

We are looking for a chef who

  • Has previous experience as a Sous Chef or a strong Junior Sous Chef ready to step up.
  • Thrives in a high-volume hospitality environment.
  • Has experience working with branded menus and operational standards.
  • Possesses strong leadership and team development skills.
  • Understands stock control, ordering and food cost management.
  • Has excellent organisational skills and the ability to manage multiple priorities.
  • Demonstrates a genuine passion for food quality and guest experience.
  • Leads by example and is confident maintaining high standards at all times.

Working Pattern

  • Split shifts: 7:00am - 11:00am, 3:00pm - 9:00pm
  • Full-time permanent position.
  • Busy breakfast and evening service operation.
