Key responsibilities for the Demi Chef de Partie are;

  • Run a smooth service, while ensuring that a consistent level of quality is maintained at all times.
  • Use an eye for quality to produce high quality items from fresh ingredients, whilst directing the junior kitchen team where needed.
  • Have a full operational knowledge of all recipes, standards and presentation style of dishes produced within the designated section.
  • Work with high quality fresh produce and organic ingredients as menus dictate.
  • Provide a consistently high level of service and product delivery.
  • Manage a section within the kitchen, maintaining standards and menu specification.
  • Develop and create seasonal dishes using fresh produce where ever possible.
  • Work closely with junior members of the kitchen and Sous Chef.
  • Co-ordinate, participate and supervise production, preparation and presentation of meals.
  • Work at an efficient pace to ensure service levels are maintained at all times.
  • Observe and meticulously follow regulations on food storage, hygiene and temperature control.
