Position Summary

This role will require the successful candidate to maintain incredibly high standards, displaying high levels of skill, creativity and attention to detail.

You will oversee the direction of the Dinner by Heston pastry team.

You shall be required to have an extensive understanding and skill in a range of classic and modern pastry techniques.

Key Responsibilities

  • Lead the team and ensure excellent quality throughout the offerings at Dinner and smooth running of the kitchen operation.
  • Communicate effectively on all issues with FOH management team.
  • Be involved in menu engineering and development in conjunction with the Executive Chef & Senior Sous Chef.
  • Oversee the smooth running of the day‑to‑day operations in the kitchen, supervising and coordinating all preparation and presentation.
  • Plan production in order to facilitate daily requirements.
  • Develop appropriate seasonal menu offerings in line with the concept of Dinner by Heston Blumenthal in conjunction with the Executive Chef.
  • Ensure appropriate cost control.
  • Liaise with suppliers to ensure adequate quality of deliveries.
  • Coordinate rotas.
  • Oversee the kitchen through both lunch and dinner.
  • Carry out requisitioning and ordering.
  • Carry out the daily briefing.
  • Liaise with restaurant management and kitchen team.
  • Encourage maximum bookings.
  • Ensure sufficient stock levels in the kitchen.
  • Drive, initiative and passion for the restaurant industry.
  • Minimum Qualifications
  • Minimum 5 years pastry experience.
  • Previous experience working at a similar style operation, managing very high standards and volume.
  • Able to inspire and lead a team.
  • A creative approach with an unparalleled eye for detail.
  • The ability to work under pressure and prioritise effectively.
  • A can‑do attitude and the ability to work effectively as part of a team.
  • Ability to maintain high and consistent food & healthcare standards at all times.
  • Drive, initiative and passion for the restaurant industry.
