Two Michelin stars, 180 covers a night. Dinner by Heston Blumenthal runs like a well-oiled machine, and we’re looking for a Sommelier who can keep pace. This isn’t just a chance to learn what it takes to run a two-starred restaurant; it’s a chance to learn the history of British cuisine, from an eighteenth-century salamagundy to salmon cured with Earl Grey.
Of course, the standards of service expected at Dinner are only possible with a certain level of regimentation. But with regiments come ranks, and we believe in moving up them. Everyone from our head chef to our maître d’ have been promoted from within. So as a Head Sommelier, if you’re ready to put the effort in, you can expect to progress quickly and move around.
After all, our hotels are international, and a fine stay means fine dining all over the world, from Tokyo to Tapei.
About the role

About the hotel
Dinner is a collaboration between two iconic names: Heston Blumenthal and Mandarin Oriental. When you set foot through these doors, you feel the spirit of the city infusing every floor.
