We are recruiting a Restaurant General Manager. Mandarin Oriental Hotel Group is the award-winning owner and operator of some of the most luxurious hotels, resorts and residences located in prime destinations around the world. About the role: It is the mission and intent of this position that the incumbent will be responsible for the leadership of the restaurant to take exemplary care for our guests and colleagues alike, to drive service excellence and deliver our business objectives and financial success. Responsibilities in the role will include, but not be limited to:

  • Managing and directing the restaurant service team on a daily basis to ensure the operation delivers consistent excellence, exceeding industry norms to always be ahead of the market and be recognised through awards and accolades accordingly.
  • Daily liaison and partnership with the Head Chef / culinary team to share information, best practice and ensure a harmonious relationship between culinary and service teams, resolving any concerns after and not during service.
  • To ensure appropriate processes and systems are in place to deliver both revenue and profit margins as per budget and forecast projections.
  • Approve/ propose menus, pricing, and promotional events for the restaurant in order to maximize revenue generating opportunities.
  • To be cognisant of quality & cost control through close liaison with the Purchasing & Logistics Director.
  • To hold overall responsibility for the wine and beverage stock and to conduct regular spot checks after the stocktake to ensure all MOHG P&Ps are followed.
  • To ensure profitability through controlling food and beverage cost, menu pricing, payroll cost and any other costs related to the restaurant.
  • To manage and have oversight of the reservations process in order to maximise numbers, website content and driving bookings through the most cost effective channels.
  • To have an integral involvement in the development of the business and the service provided.
  • To liaise, oversee and manage any projects such as investment or refurbishments etc.

The successful candidate will have 5+ years of experience in a similar role.
