Malones is an authentic Irish-owned and operated hospitality business, expanding rapidly across new locations. We’re built on community: great people, great hospitality, and the kind of place that feels like the local, wherever you are. We’re opening Malones Dundee in August and we’re looking for a hands-on General Manager to lead the launch in a new city. This role starts before opening day. Your first focus will be helping build the venue and the team, and immersing yourself in our other Malones venues so you can bring the Malones standards, energy, and guest experience to Dundee from day one. Working closely with our Ops Manager and Head Office, you’ll take real ownership of day-to-day delivery. This role suits someone who leads with hospitality, knows Dundee (or is excited to become part of it), and can drive sales while keeping a sharp eye on sustainable profit.

What you’ll be doing:

  • Leading the opening of Malones Dundee and setting the tone for the venue
  • Delivering a smooth pre-opening and launch, with strong early guest feedback and repeat visits
  • Spending time in our other Malones venues to learn how we run service, standards, events, and guest experience
  • Recruiting, training, and retaining a high-performing opening team that lives the Malones standards
  • Working with our Senior Ops Team to shape and evolve the offer to fit Dundee while staying true to the Malones brand
  • Establishing Malones Dundee in the local community through partnerships and consistent presence
  • Owning standards, service, and commercial performance across wet-led trade with a supportive food offer
  • Managing P&L performance: labour planning, stock control, waste, and controllable cost management

Who we’re looking for:

  • Experienced GM in a high-volume hospitality business
  • Hospitality-first mindset and a positive, can-do attitude; a real problem solver
  • Strong people leadership and coaching skills
  • Commercial confidence: you understand profit, not just sales
  • Comfortable working independently and taking real ownership
  • Brings ideas and energy: sports, live music, promotions, and community-building
  • Local knowledge of Dundee, or a strong desire to become part of the community
