We’re Maki Nori — a modern, upscale Japanese-inspired dining concept celebrating elevated sushi, refined small plates, exceptional produce, and thoughtful hospitality.

We’re looking for a skilled and passionate Sushi Chef to join our London kitchen. You’ll work closely with our Head Sushi Chef and wider kitchen team to deliver consistently high standards across our sushi offering.

This role is ideal for someone with a strong foundation in sushi who takes pride in precision, presentation, and quality. We’re looking for a chef who understands that great sushi is as much about consistency and attention to detail as it is technical skill.

Key Responsibilities:

  • Prepare and execute sushi, sashimi, nigiri, maki and other Japanese dishes to a consistently high standard
  • Handle and prepare fresh fish with care, precision, and minimal waste
  • Maintain excellent standards of sushi rice preparation, seasoning, temperature, and consistency
  • Demonstrate confident knife skills and accurate portioning
  • Ensure presentation and plating meet Maki Nori’s upscale standards
  • Complete daily mise en place efficiently and maintain a well-organised section
  • Work closely with the Head Sushi Chef and wider kitchen team during service
  • Support the smooth operation of both sushi and kitchen sections when required
  • Maintain excellent food safety, hygiene, and allergen standards
  • Follow stock rotation and storage procedures while helping to minimise wastage
  • Maintain a clean, organised, and professional workstation
  • Deliver consistently under pressure during busy services

Qualifications:

  • Previous experience as a Sushi Chef within a Japanese restaurant or quality-led kitchen
  • Good knowledge of sushi preparation, including sashimi, nigiri and maki
  • Strong fish preparation and knife skills
  • Good understanding of sushi rice preparation and handling
  • High standards of presentation and attention to detail
  • A genuine appreciation for quality ingredients and Japanese cuisine
  • Ability to work efficiently and remain composed during busy service
  • Strong understanding of food hygiene, safety, and allergen procedures
  • Reliable, organised, and comfortable working as part of a close-knit kitchen team
  • A positive attitude and willingness to continue learning and developing your craft

Experience within an upscale or premium Japanese restaurant is highly desirable, but we’re also open to talented chefs who have strong sushi fundamentals and are ready to step into a more elevated environment.
