Key responsibilities:
- Supervise and lead sushi chefs
- Ensure consistency and quality in all sushi dishes
- Prepare and craft sushi dishes with precision and presentation as per company requirements
- Maintain top hygiene and food safety standards
- Manage fish and ingredient inventory
- Ensure knife skills and techniques meet traditional standards
- Coordinate with kitchen staff for smooth service
- Stay updated on seasonal ingredients and sushi trends
Qualifications:
- Extensive knowledge and experience in sushi preparation (know how to fillet fish, make basic and advanced sushi and sashimi)
- Proficiency in handling a variety of sushi ingredients
- Understanding of food and safety regulations
- Ability to work in a fast-paced, high-pressure environment
- Strong sense of cleanliness and attention to detail
- Food handling certification (as required by region)
- Strong communication skills
- Strong teamwork skills
