We are recruiting for an
Deputy Head Sommelier for our members club in a grade I listed townhouse in Mayfair.
As the
Deputy Head Sommelier , your primary function is to support the Head Sommelier in leading and managing the wine operations across all areas within the club.
You will play a key role in the delivery of excellent wine service for Maison Estelle members, ensuring consistency and quality while mentoring the sommelier team.
You will deputise for the Head Sommelier in their absence, uphold service standards, assist in team development, and help oversee stock management and wine-related events.
This is a proactive, service focused role that requires strong leadership and in-depth wine knowledge.
As a
Deputy Head Sommelier you will be responsible for
- Supporting the Head Sommelier in managing the day-to-day operations and activities within the wine areas, ensuring a consistently high level of service is delivered to members.
- Supervising wine preparation and presentation to ensure all offerings meet Maison Estelle's standards of quality and consistency.
- Assisting with creating and managing rotas for the sommelier team in accordance with labour budgets and business needs.
- Supporting the Head Sommelier with reviewing sales performance, beverage costs and GP targets.
- Leading the sommelier team during service and setting a professional example with regard to punctuality, behaviour, hygiene, and overall conduct.
- Assisting with the development and maintenance of the wine list, including wine sourcing, pricing, and contributing to programming and events.
- Acting as the point of contact in the absence of the Head Sommelier, ensuring service continuity and team coordination.
- Maintaining the cleanliness and organisation of all wine service areas, including FF&E, glassware, silverware, and equipment.
- Handling member concerns or complaints related to wine with professionalism and ensuring positive outcomes.
- Supporting in achieving department budgets and targets including wine costs, sales, and labour efficiency.
- Helping train and develop junior sommeliers and F&B colleagues in wine knowledge and service techniques.
WHO WE ARE LOOKING FOR
- WSET Level 3 or Diploma
- At least 4 years proven experience in a Sommelier role within a luxury / lifestyle hospitality business.
- Excellent time-management skills; comfortable prioritising what is important during busy periods.
- Obsessive about wine
- You are an inspiring leader who relishes taking responsibility for running the Wine department.
- A balance between a methodical and process-driven approach and flexibility and creativity when it comes to meeting deadlines and finding solutions.
- Excellent communication skills and comfortable talking to colleagues, senior management, and coming front of house to talk to members.
- A genuine passion for hospitality and hosting.
