Maison Estelle is a private members’ club set in a Grade I-listed Georgian townhouse on Grafton Street, Mayfair. A ‘hosted home’, bringing people together that have plenty to say and nothing to prove. A new school club (no rules), with old school values of personalised service and discretion.
We are looking for an enthusiastic Chef de Partie to join our Culinary team based in our kitchen focused around Italian cuisine, The Attic Osteria. The on target earning potential for this role is £43,000 per annum based on a 48 hour contract - comprising a base salary of £32,000 plus a qualified estimate of £11,000 in gratuities and service charge. Please note this role is paid hourly so this is a projected salary and OTE.

- Producing all items, with the correct recipe card and procedure, correct quantity and of good quality.
- Delivering a fresh, high quality food offer for our members club.
- Working and assisting across all food sections in the kitchen, as required.
- Ensuring the highest possible standard of presentation & cleanliness in all areas of the kitchen.
- Maintaining a clean and orderly cooking station.
- Showing full support to senior staff, the goals and ideals of the operation.
- Controlling the wastage and costs of their section, and meeting budget specifications.
- Storing food and provisions including raw material quality checks.
- Allocating duties to demi-chef de parties and commis chefs.
- Supporting and participating in activities to improve operations or efficiency.
- Keeping all H&S and Food safety documentation and reporting up to date.
- Ensuring that the kitchen and stock rooms are cleaned to a high standard.
- Assisting the BOH Manager in ensuring the kitchen equipment is properly maintained.
- Preparing and assisting with regular stock takes.
- Ensuring that all stock is secure and there is no stock loss from the Kitchen.

- Proven experience working in the Kitchen departments in a luxury / lifestyle multi-outlet food and beverage operation.
- Stays up to date with current food trends and best practices.
- Must be able to work flexibly including evenings and weekends.
- Excellent communication skills and comfortable talking to colleagues and members.
- A genuine passion for hospitality and hosting.
