The Pastry Kitchen
Led by Executive Chef Leo Tanyag (Los Mochis, JUNO, LUNA Omakase; formerly OKKU Dubai), the MA/NA pastry program mirrors the kitchen's philosophy - precision, restraint, balance and emotion through simplicity. Desserts will highlight seasonality, Japanese flavours, fermentation, refined sweetness and elegant presentation, with a focus on texture, temperature and thoughtful composition.
The Role - Pastry Chef de Partie
As Pastry Chef de Partie, you will be a key part of our opening pastry brigade, working closely with the Head Pastry Chef and senior kitchen team to develop and execute MA/NA's dessert and pastry offering. You will take ownership of your section with care and precision, ensuring consistency, organisation and calm execution across service and prep. Your craft will reflect discipline, creativity and finesse - understanding that balance, texture and finish are what transform dessert into a lasting memory. This is an opportunity to work with exceptional produce, advanced techniques and a team that values artistry, integrity and growth.
What We're Looking For
- Previous experience as a Pastry Chef de Partie or Demi Pastry Chef de Partie in a high-end or fine dining environment
- Passion for refined desserts, Japanese flavours and modern pastry techniques
- Strong technical skills in pastry preparation, plating and finishing
- Excellent organisation and composure in a fast-paced service environment
