The Role

As Sushi Chef de Partie, you will be a core part of our opening sushi brigade, working closely with the Head Sushi Chef and senior kitchen team to deliver MA/NA's sushi and sashimi offering with excellence and integrity. You will take ownership of your section from fish preparation and knife work to nigiri, sashimi and maki ensuring consistency, precision, and calm execution in every service. You understand that rice temperature, cut angle, seasoning balance and presentation are what elevate sushi into an experience. This is an opportunity to work with exceptional seafood, traditional and modern techniques, and a team committed to craft, refinement and growth.

What We're Looking For

  • Previous experience as Sushi Chef de Partie or Demi Sushi Chef in a high-end or fine dining environment
  • Strong knowledge of Japanese fish butchery, rice preparation and sushi fundamentals
  • Excellent knife skills and exceptional attention to detail
  • Calm, organised and disciplined approach in a fast-paced service
  • Passion for Japanese cuisine, teamwork and continuous development
