MA/NA is seeking an exceptional Sommelier to join the opening team of our exciting new restaurant on Upper Grosvenor Street, Mayfair. Inspired by the Japanese philosophy that every ingredient carries an invisible life force, MA/NA will blend refined Japanese cuisine with an outstanding programme of wine, sake, and cocktails to create unforgettable guest experiences. Every detail has been carefully considered to celebrate craftsmanship, balance, and hospitality at the very highest level.

As a Sommelier, you will play a vital role in bringing this vision to life by delivering knowledgeable, engaging, and memorable wine and sake service for every guest.

The Role

As a Sommelier, you will work closely with the Head Sommelier and wider beverage team to provide exceptional recommendations, guide guests through pairings, and contribute to an industry-leading wine and sake programme. The Sommelier position is ideal for someone with experience in premium restaurants who combines technical knowledge with genuine warmth, curiosity, and a passion for guest experience.

Key Responsibilities

  • Deliver exceptional wine and sake service with confidence and professionalism.
  • Recommend pairings that complement our Japanese-inspired menu.
  • Share the stories behind wines, sake, and producers in an engaging and approachable manner.
  • Support the maintenance and development of the wine and sake programme.
  • Assist with cellar organisation, stock rotation, and inventory management.
  • Work collaboratively with the kitchen, bar, and front-of-house teams to ensure seamless service.
  • Participate in tastings, training sessions, and ongoing beverage education.
  • Maintain the highest standards of presentation, hospitality, and attention to detail.
  • Contribute positively to a collaborative and high-performing opening team culture.

What We're Looking For

  • Previous experience working as a Sommelier within a fine dining or premium hospitality environment.
  • Strong knowledge of international wine regions, producers, and styles.
  • An interest in sake and Japanese beverages; formal qualifications are advantageous but not essential.
  • Excellent communication and guest engagement skills.
  • A calm, organised, and professional approach during busy service periods.
  • A genuine passion for hospitality and continuous learning.
