We're building our bar team at Milk Wood House.
The bar is open daily, so we need people who can cover a range of shifts, whether that's full-time hours, or a couple of evenings that fit around everything else.
You'll run the bar for guests visiting Milk Wood House, working across our drinks list from the classics through to our own creations, so every guest gets a drink made properly, whether it's their first visit or their fifth.
The drinks matter most.
We're looking for someone with a basic knowledge of traditional and modern mixology, and a head for the numbers behind the bar too—stock take, menu costing, and menu engineering are all part of keeping things running properly, not just on the night but week to week.
WSET Level 1 (or equivalent) is required.
It's a role that suits someone who takes pride in a well-built drink, likes the pace of a busy service, and wants a hand in how the bar performs, not just how it pours.
- What you'll be doing
- Behind the bar
- Preparing and serving drinks to a consistent standard - classic cocktails through to our own creations
- Setting up and closing down the bar, including stock rotation and mise en place
- Keeping the bar, glassware and equipment clean and presentable throughout service
- Basic wine and spirit knowledge to advise guests and make recommendations
- Following recipes and pour standards so every drink is consistent, whoever's on shift
- Stock and numbers
- Taking part in regular stock takes and keeping accurate records
- Supporting menu costing and pricing, so the drinks list stays profitable as well as popular
- Helping with menu engineering — knowing what earns its place on the list and what doesn't
- Ordering and rotating stock, and keeping on top of wastage
- With guests
- Delivering friendly, attentive service across the bar and any table orders
- Handling payments accurately and keeping the till reconciled
- Responding to guest requests and special occasions with genuine hospitality
- Flagging anything that needs attention
- Across the shift
- Working safely and legally around licensing law and Challenge 25
- Keeping the bar area secure, and cash and stock accounted for
- Locking up and leaving the bar ready for the next shift
What we're looking for
- Reliable above all — a busy bar only works if everyone turns up
- Weekend & evening availability
- Comfortable working under pressure during a full service
- Basic knowledge of traditional and modern mixology
- Basic knowledge of financials — stock take, menu costing, menu engineering
- WSET Level 1 (or equivalent) required
- Friendly, guest-focused, and comfortable striking up conversation
- Discreet and trustworthy — you'll be handling cash, stock and guest trust
- Own transport is helpful given the hours and location
- Previous bar experience is welcome; hotel or resort bar experience is a real plus
