About MA/NA

Opening in early **** on Upper Grosvenor Street, MA/NA is born from the Japanese philosophy that every ingredient carries an invisible power β€” a life-force shaped by nature and the hands that honour it. 'Mana' is the spiritual energy that exists beneath the surface of all things. It is felt rather than seen β€” transforming emotion into experience, and a meal into memory. Guided by this belief, MA/NA will offer a seamless blend of restaurant and bar, refined Japanese dishes alongside an exceptional cocktail, wine and sake list. Here, cocktails flow effortlessly into dinner, and dinner naturally returns to drinks. Every element of MA/NA, from design and service to sound and light, is intentional. Each detail celebrates the extraordinary within the simple.

The Pastry Kitchen

Led by Executive Chef Leo Tanyag (Los Mochis, JUNO, LUNA Omakase; formerly OKKU Dubai), the MA/NA pastry program mirrors the kitchen's philosophy β€” precision, restraint, balance and emotion through simplicity. Desserts will highlight seasonality, Japanese flavours, fermentation, refined sweetness and elegant presentation, with a focus on texture, temperature and thoughtful composition.

The Role β€” Pastry Chef de Partie

As Pastry Chef de Partie, you will be a key part of our opening pastry brigade, working closely with the Head Pastry Chef and senior kitchen team to develop and execute MA/NA's dessert and pastry offering. You will take ownership of your section with care and precision, ensuring consistency, organisation and calm execution across service and prep. Your craft will reflect discipline, creativity and finesse β€” understanding that balance, texture and finish are what transform dessert into a lasting memory. This is an opportunity to work with exceptional produce, advanced techniques and a team that values artistry, integrity and growth.
