As Assistant Bar Manager at MA/NA, you will support the leadership and execution of an exceptional bar programme that balances precision, creativity, and craft. Working closely with the Bar Manager, you will help deliver a world-class cocktail offering that reflects harmony, discovery, and respect for technique. You will play a key role in guiding guests through a journey of flavour, texture, and emotion, bringing the philosophy and energy of MA/NA to life at the bar. You will act as a leader on the floor, supporting the bar team through service, training, and daily operations, while helping ensure seamless collaboration between bar, kitchen, and floor teams. This role is ideal for a driven and thoughtful bar professional ready to step into senior leadership within a landmark opening.

Key Responsibilities

  • Support the Bar Manager in overseeing daily bar operations, service standards, and team performance
  • Assist in the development, execution, and maintenance of the cocktail menu in line with MA/NA's philosophy
  • Deliver refined, intuitive, and emotionally engaging guest experiences during service
  • Lead by example behind the bar, ensuring consistency, precision, and calm under pressure
  • Support training, mentoring, and development of bartenders and barbacks
  • Collaborate closely with the Executive Chef, Head Sommelier, and wider beverage team to ensure harmony between cocktails, food, wine, and sake
  • Assist with inventory management, stock control, ordering, and supplier relationships
  • Maintain the highest standards of cleanliness, organisation, and presentation behind the bar
  • Contribute creatively through tastings, research, and industry engagement
  • Step into full bar leadership in the absence of the Bar Manager

What We're Looking For

  • Experience as a Senior Bartender, Assistant Bar Manager, or Head Bartender in a fine dining or high-end cocktail environment
  • Strong understanding of classic and contemporary cocktail techniques and flavour structures
  • Knowledge of Japanese spirits, ingredients, and bar culture (or a strong desire to deepen this knowledge)
  • Confident leadership presence with a collaborative and supportive mindset
  • Refined palate, creativity, and strong attention to detail
  • Excellent guest communication and storytelling skills
  • Organised, disciplined, and composed during busy services
