Los Mochis City is seeking an exceptional Assistant Head Sommelier to join our dynamic team. Our flagship restaurant, located on the rooftop of 100 Liverpool Street, offers a stunning 14,000 sq ft dining space with a 3,000 sq ft terrace boasting breathtaking views of the City. The Role
As an Assistant Head Sommelier, you will work closely with the Head Sommelier to curate and deliver an outstanding wine and sake experience for our guests. You will have the opportunity to showcase an exciting and diverse selection of wines while bringing a strong focus on sake pairings to complement our innovative menu.
Key Responsibilities:
- Assist in managing the wine & sake programme, ensuring a diverse and exciting selection that enhances the dining experience.
- Provide expert recommendations to guests, offering sophisticated pairings for our Mexican-Japanese cuisine.
- Support in training and mentoring the front-of-house team on wine, sake, and beverage knowledge.
- Maintain high standards of cellar management, stock control, and ordering.
- Assist in developing sake offerings, ensuring an authentic and curated selection.
- Host wine and sake tastings, pairing events, and staff training sessions.
- Ensure all service meets luxury hospitality standards, delivering an exceptional guest experience.
- Work alongside the Head Sommelier and senior management to enhance the overall beverage programme and drive revenue.
Requirements & Skills:
- Previous experience as a Senior Sommelier or Assistant Head Sommelier in a high-end restaurant.
- A strong knowledge of sake, with WSET Level 3 (or equivalent) in Sake or Wine being highly desirable.
- A passion for wine, sake, and beverage pairing, with an understanding of Mexican and Japanese cuisine as a bonus.
- Strong communication and training skills, with the ability to educate and inspire the team.
- Exceptional guest service skills, with a warm and engaging approach.
- Highly organised, with experience in stock management and ordering.
- Ability to work under pressure in a fast-paced, high-volume environment.
- Right to work in the UK (pre-settled or settled status if applicable).
