The Role
As Senior Sushi Chef, you will work closely with the Head Chef to ensure the seamless execution of our sushi menu. You will have the opportunity to showcase your skills, develop new creations, and mentor junior chefs in a fast-paced, high-energy kitchen. This role requires exceptional knife skills, deep knowledge of sushi preparation, and a passion for innovation.
Key Responsibilities:
- Oversee the preparation and execution of all sushi dishes, ensuring precision, consistency, and exceptional presentation.
- Maintain the highest hygiene and food safety standards, ensuring full compliance with HACCP.
- Lead, train, and mentor junior sushi chefs, fostering a culture of learning and excellence.

- Collaborate with the front-of-house team to ensure seamless service and guest satisfaction.
- Manage stock control and minimise waste, ensuring the most effective use of ingredients.
- Stay ahead of industry trends and innovations to continuously elevate our sushi programme.
Requirements & Skills:
- Proven experience as a Senior Sushi Chef, Sushi Sous Chef, or Sushi Chef de Partie in a high-end restaurant.
- Exceptional knife skills and a deep understanding of traditional Japanese sushi techniques.
- Experience working with high-quality fish and seafood, with strong knowledge of sourcing and sustainability.
- Ability to work efficiently under pressure in a fast-paced, high-volume kitchen.
- Strong attention to detail, with a commitment to consistency and presentation.
