Los Mochis is seeking a highly skilled, creative and ambitious Sous Chef to join our award winning restaurant in the heart of Notting Hill.
From Tokyo to Tulum, Los Mochis restaurant is the global pioneer of pairing Mexican & Japanese cuisines, showing off the vibrancy, passion, and heat of Mexico whilst celebrating the cool elegance and precision of Japan.

As a Sous Chef, you will support the Head Chef with all aspects of the department, including menu development, production, and maintaining the highest standards of quality and presentation. This leadership role requires exceptional culinary expertise, strong management skills, and a passion for creating exquisite pastries.

Responsibilities
Control and direct the food preparation process and any other related activities
Plan orders of equipment or ingredients according to identified shortages
Arrange for repairs when necessary
Remedy any problems or defects
Be fully in charge of hiring, managing and training kitchen staff
Oversee the work of subordinates
Estimate staff’s workload and compensations
Maintain records of payroll and attendance
Comply with nutrition and sanitation regulations and safety standards
Foster a climate of cooperation and respect between co-workers
Requirements
Proven experience in a Sous Chef role
Previous experience with Japanese cuisine preferred.
Exceptional proven ability of kitchen management
Ability in dividing responsibilities and monitoring progress
Outstanding communication and leadership skills
Up-to-date with culinary trends and optimized kitchen processes
Good understanding of useful computer programs (MS Office, restaurant management software, POS)
Credentials in health and safety training
Degree in Culinary science or related certificate
