LUNA Omakase is seeking an exceptional Omakase Chef to join our immersive dining experience within Los Mochis London City. LUNA celebrates the art of Sosaku-style Edomae cuisine, where each dish is a tribute to the season's finest ingredients. Our chefs skilfully blend time-honoured Edomae techniques - ageing, curing, and marinating - with creative expression, introducing refined elements that awaken the senses. As an Omakase Chef, you will play a leading role in delivering an intimate, seamless dining journey, working with the highest quality ingredients to create precise, elegant, and thoughtful dishes while engaging directly with guests.

Our 12-course menu follows the rhythm of the moon - birth, growth, change, and renewal. As the lunar cycle shifts, so does our menu, evolving with the seasons, ingredients, and inspiration. Key Responsibilities:- Lead and execute the Omakase service, delivering a refined, story-driven tasting menu with confidence and precision.
- Work closely with the Executive Head Chef to develop, evolve, and execute seasonal menus aligned with LUNA's philosophy.
- Prepare and present dishes with exceptional technique, balance, and attention to detail in an open-kitchen setting.
- Demonstrate mastery of traditional and modern Japanese culinary techniques while embracing innovation and creativity.
- Handle the finest seasonal and premium ingredients with respect, ensuring minimal waste and maximum flavour.
- Engage with guests throughout the dining experience, sharing knowledge, inspiration, and storytelling behind each course.
- Maintain impeccable mise en place, cleanliness, and organisation at all times.

- Proven experience as an Omakase Chef or senior-level chef within a high-end Japanese or Omakase restaurant.
