Los Mochis is seeking an exceptional and highly accomplished Senior Sommelier to join our flagship team and lead our wine program to new heights in our stunning 14,000 sq ft rooftop restaurant at 100 Liverpool Street. Located on the 9th floor, the restaurant features a 3,000 sq ft outdoor terrace with panoramic views of the City. This marks our second London location following the success of Los Mochis Notting Hill.

Key Responsibilities
- Lead and oversee the entire wine program, ensuring it reflects the restaurant’s concept, quality, and ambition.
- C curate, develop, and continuously refine a world-class wine list, including rare and exclusive selections.
- Provide expert guidance to guests, delivering an elevated and personalised wine experience.
- Collaborate closely with the Executive Chef and senior management to design innovative wine pairings for seasonal menus and special events.
- Mentor, train, and inspire the sommelier and front-of-house team, fostering a culture of excellence and knowledge-sharing.
- Conduct structured wine training programs and tastings to maintain exceptional service standards.
- Build and maintain strong relationships with suppliers, winemakers, and distributors to source unique wines.
- Oversee cellar management, ensuring optimal storage, stock control, and profitability.
- Stay ahead of global wine trends, emerging regions, and industry developments.
- Act as a brand ambassador for the wine program and contribute to the restaurant’s reputation.

Requirements & Skills
- Proven experience as a Senior Sommelier or Head Sommelier in a high-end restaurant or luxury hotel
- Deep expertise in global wines, regions, and advanced pairing techniques
- Strong leadership and team development skills

- Commercial awareness, including cost control and inventory management
